So, uh, hey. Remember the spiced pumpkin bread from yesterday? So I was telling my mom about the recipe last night, and she asked about the ingredients, and I started rattling off everything, and then I realized something.
The recipe calls for 1 16 oz. can of pumpkin. I found 15 oz. cans at the store and bought two, figuring I'd just use 1 can plus a tablespoon or two from the second can.
And. Well. Nicki started talking to me and I was a little distracted and I ended up putting in the entire two cans. The recipe called for 16 ounces and I put in 30.
No wonder it was so, uhm, moist.
Despite that, it still turned out really good and the cook time didn't need to be altered at all. In fact, I just might put in 30 ounces if I ever make this again in the future.
